Crispy Buttered Peach Fruit Cobbler

This is our favorite cobbler because of the delicious crispy top that stays crispy for a few days. It's terrific with vanilla ice cream and also makes wonderful leftovers with morning coffee!



You can easily control the amount of sugar and/or cinnamon and can use any kind of fruit you want. Peaches are my favorite, but you can cheat and use a pie filling (just omit the brown sugar) or any fresh or frozen fruit. (See additional fruit ideas below).

It's an easy cobbler to make ahead and throw in the oven at the last minute.


Ingredients (Yields one 9"x13" cobbler)

Fruit Filling:
  • 2lbs of fruit (fresh or frozen) **
  • 2 tsp cinnamon (or pumpkin pie spice mix)
  • 1/2 tsp salt
  • 3/4 cup dark brown sugar
  • 4 oz (1/2 stick) unsalted butter, cold
Topping:
  • 1 cup flour
  • 1 1/4 cup white granulated sugar
  • 3/4 tsp salt
  • 3/4 tsp baking powder (not baking soda)
  • 1 egg
Directions:
  1. Preheat oven to 350F (175C)
  2. Spread the fruit in the bottom of a 9"x13" casserole dish.
  3. Sprinkle the cinnamon and salt over the fruit.
  4. Cut the butter into tiny 1/2" cubes. (It's easiest to cut it in half long ways, then half those halves long ways. Then slice the sticks into cubes.)
  5. Dot the butter evenly along the cobbler topping.

  6. Sprinkle the brown sugar over the fruit.

  7. If the fruit is frozen, let the whole thing sit on the counter for an hour or so while the fruit thaws a bit.
  8. Use a whisk to mix all the dry topping ingredients together well in a medium bowl except for the egg. If want to wait to bake the cobbler until right before dinner so that it's piping hot, wait to continue the following steps until right before dinner.
  9. Break the egg right on top of the dry topping and stir in with a fork until it resembles a crumbly topping.
  10. Spread the topping evenly over the fruit and bake for 1 hour until it is brown.
    In the oven, ready to go!
    After an hour.... the hot bubbly baked goodness is just too much!
    Crusty and gooey!
  11. Serve with ice cream.

** Other terrific fruit combinations:
  • 3 15oz cans cherry pie filling and 1/2 cup shredded sweetened coconut (omit the brown sugar)
  • 3 15oz cans pineapple in syrup
  • 2 lbs peeled and sliced apples tossed in juice of 1/2 squeezed lemon
