The sugar looks just like fresh snow! |
Ingredients:
- Muffins (These blueberry muffins work great because they have ridges)
- 1 lemon **
- 1/4 cup sugar
- 1/2 cup sugar
- Put the 1/2 cup sugar into a small bowl and grate the lemon zest into it. Mix well and set aside.
- Put the lemon juice and 1/4 cup sugar in a very small sauce pan and bring to a low boil for about 5 minutes or until reduced by half.
Sugar syrup has been reduced and the bowl of sugar and lemon zest is ready to go! - If the muffins are fresh baked, wait for them to cool about 5 minutes. (This is the perfect time as they'll absorb some of the syrup when still slightly warm.)
- One at a time, hold a muffin upside down and dip into the syrup, then the sugar mixture.
- Turn upright and let sit until set, about 20 minutes.
